Challenges

• Needed to generate revenue from a loss making venture.
  
• Had to self fund any work, very limited budget.
  
• Staff and visitors had to both use the one facility.
  
• Staffing levels were too high and with limited retail or customer skills.

• Develop a concept and menu which met the needs of staff and visitors.
  
• Create a low budget concept design and brand brief.
  
• Review the staff and advise a new structure.
  
• Establish standards for product range, service and merchandising.

• Created a contemporary eat in and take away food concept which makes money.
  
• Wrote a service, merchandising and staffing strategy.
  
• Worked with the architect and graphic designer to create a brand identity, through signage uniforms, ticketing point of sale.
  
• Developed and delivered staff training programs in customer service, team work menu management and merchandising.
  
• Implemented contemporary visual merchandising standards.
  
• Continue to train staff, re-merchandise and mentor the team.
• This year sales jumped 10% after our annual visit.
