The Venue

  • Canberra Raiders Club was a popular venue - bar, bistro and gaming.
  • The surrounding suburbs were changing and the "new" wave of residents were a market who were not yet catered for. They had a greater spend capacity and very different leisure requirements.
  • Far sighted Management decided to extend the Club offer to capture an increased portion of the local market.

Challenges

  • Management and Food Consultants Australia had to determine what food and beverage service would meet the needs of the new target market.
  • The two food and beverage concepts had to support the findings of the market research, work in harmony and be viable in both the short and long term.
  • Management had a small team who needed to grow with the project and take on new responsibilities.

What FCA was asked to do

  • Food Consultants Australia were asked to help create two distinct food offers.
  • One concept to help support the new Club venue. The other to attract a different spend and different market to that offered by the Club.
  • The venues were to be separate entities but the kitchen was to be shared.
  • This required two menu and two service styles being delivered from one kitchen.

What FCA did

  • Food Consultants Australia created two distinct menu and service style offers for the renamed Mawson Club and the Restaurant.
  • Worked closely with the kitchen designer and architects to create a centralised kitchen and service areas.
  • Developed operational procedures for each facility.
  • Provided a dynamic support team to train and implement the set up and day to day operation of the new venues.
  • Club membership increased from 2,500 to 13,000 and still rising.
