Challenges

• To accommodate within the floor and building envelope the specific entertaining and catering requirement of the 2,000 employees.
  
• To provide a workable operational philosophy that supported the high volume and five star catering and varying demands.
  

What FCA was asked to do

• Identify an operational strategy to support the diverse catering requirements and facilities within the building.
  
• Develop a design brief for all of the entertaining, training and day to day food and beverage requirements.
  
• Engage KPMG stakeholders and establish their specific requirements.
  
• Provide advice on new technology trends within the kitchen, service areas and dining rooms.
  

What FCA did

• Collated all participants catering requirements within the KPMG catering design brief.
  
• Detailed space service systems and equipment to service:
  • 20 meeting / dining rooms (208 capacity).
    
  • 1 partners lounge (55 capacity).
    
  • 1 auditorium (130 capacity).
    
  • 1 kitchen and stewards pantry.
    
  • 4 training rooms (160 capacity).
    
  • 2 service portions (remote).
    
• Developed a highly efficient catering system including back of house and front of house service facilities within the budget and building constraints which meet, and in some instances exceeded, operational demands of the high volume facility.
