The Venue

  • Wrest Point Hotel Casino, includes accommodation, conferences, entertainment and a casino.
  • Wrest Point is operated by the Federal Hotel Group. A budget of $23 million had been identified to upgrade the property.

Challenges

  • The Boardwalk food court and the traditional Chinese restaurant had seen a continual decline in trade and loss of revenue.
  • Local food trends and customer expectations were changing.
  • Management wanted to grow their customer base and attract new customers including the young 'hip' crowd whilst not alienating their current customer.
  • Any new food and beverage concepts could not detract from the existing food and beverage. It had to stand alone, yet be part of the total food & beverage mix.
  • The redevelopment of the food and beverage outlets had fixed budgets and urgent timeframes.

What FCA was asked to do

  • Develop a contemporary Restaurant and Bar concept to replace the current all purpose Boardwalk Food Court.
  • Develop a "value for money" Bistro concept requiring minimal financial investment to replace the outdated Chinese restaurant.
  • Ensure the concepts would appeal to the target market identified in the research.
  • Work within existing building envelopes and utilise existing kitchen equipment in both outlets.

What FCA did

  • Reviewed local competition, demographic research and current operations and identified the two new food and beverage concepts.
  • Created the design briefs, including - suggested names, customer profile, indicative spatial layout, theme, finishes, colours, menu, service style, uniform and operational style.
  • Anchors Bistro concept was developed to provide customers with great views, quick service, "value for money" meals and a comfortable ambience.
  • Pier One Restaurant and Bar was developed to provide a unique contemporary venue, capitalizing on the waterside location, providing an all day menu offer, including wood fired pizza. The creative lounge and bar area was designed to attract new customers throughout the day and into the night.
  • The two new restaurant concepts added value to the total food and beverage offer within the casino and successfully attracted new and existing customers on a more regular basis.
